Dry pho in Gia Lai- specialty of Mountain Street
Vietnam has 58 provinces and each province has unique culture and tradition. People from different provinces have own special foods. In Gia Lai, each traditional food is influenced by its religion as well as its history. Dry pho is one of food like that.
Dry pho is usually eaten for breakfast and it is also a common food in each family in Gia Lai in the morning because it is quite easy to prepare for a group of people in short time. However, anyone has chance to enjoy it at the first time, they also feel surprised with the luxurious display of this dish that consists of a bowl of noodles, a bowl of soup, a full disk of different raw vegetables and a cup of fragrant soy sauce.
This dish is called with the name “Pho hai to” (two bow pho) and may be this name illustrates this dish exactly as its name means. It has two bows, one is sauce and another one is a bow of noodle. It brings a feature and difference between Pho in Gia Lai and different regions such as Hue, Hanoi, Sai Gon, etc. Tay Nguyen people consider this dish as a symbol of the climate of this area. There are two seasons in Gia Lai that is dry season and rainy season.
This dish is made with two main ingredients as beef and pork. Water is boiled and then people put the pig and cow bone in the water pot to have sweet and limpid water. After that they keep it with a small fire for about 5-7 hours to stew bone and continue skimming off the spume. To make this dish, people must use beef or veal meat. They cut meat into thin slice and then put them in pork water quickly and ladle in a bow. After that the makers chop pork into small pieces, put them into a noodle bow and cook them with union. People can eat dry “pho” with lettuce, basil, and especially it can not be lack of a sauce of soy and sate which make the dish more special and attractive.
Nowadays, dry “pho” plays an important role in cuisine culture of Tay Nguyen people. However, you can find it in Ha noi but it can not be totally delicious as dry “pho” in Gia Lai. Thus, if you have chance to go to Gia Lai, do not miss chance to enjoy this dish which is regarded as a specialty of this land.
